      The Process Operator & Production Lead will be responsible for overseeing the establishment of a fully automated milk processing and ice cream production line. The final products include skim condensed milk, cream aging, butter production, fresh cream, as well as a full line of premium grass-fed ice cream. The ultimate volume is in the 15,000 pints/day range.

      Position Type: Dairy Production Lead - Full-Time.

      Monday - Friday. No weekends.

      Responsibilities may include: Responsibilities will include three main areas:

      High-Temperature Short Time (HTST)

      -Ensure proper product rotation of raw dairy products and verify with the lab the quality of standards prior to starting and pasteurization functions.
      -Perform all sanitation duties in raw, blending, and pasteurizing areas.
      -Perform pasteurization, batching, and blending of all fluid products and ice cream.
      -Document all legal requirements for pasteurization processes.
      -Identify and tag storage tanks for product mix in the process.
      -Ensure refrigeration and agitation are activated for product mix in the process.
      -Communicate with the director of operations all equipment malfunctions.
      -Develop a daily processing schedule.


      Ice Cream Batch Preparer

      -Obtain and verify dry ingredient requirements from dry storage and store ingredients at the blending station.
      -Connect the proper fluid ingredient tanks and withdraw the correct batch amounts.
      -Add dry ingredients per proper procedure to ensure the formulation meets quality specifications and parameters.
      -Record all necessary information and documentation during the formulation process.
      -Record all necessary information relating to ingredient lot numbers.
      -Perform sanitation duties (CIPs and manual cleaning of equipment) in batching and blending areas.
      -Test wash and sanitizing solutions per sanitation manual to ensure quality standards and specifications are met.
      -Responsible for ensuring that all unused dry ingredients are returned to the dry storage area in proper (sealed) condition for storage.


      Raw Milk and Cream Receiving

      -Ensure that ingredients received are stored in proper tanks and silos in accordance with storage regulations (e.g., time, temperature, agitation).
      -Inspect and test each incoming milk shipment for compliance with regulatory standards.
      -Performs, records, and maintains documentation for quality checks and informs the quality team of non-compliance.
      -Performs complete cleaning, sanitizing, and all other procedures before releasing tanker from premises.
      -Ensure that tanker drivers operate in accordance with regulatory guidelines while they are in the plant.
      -Perform and record all sanitation duties in the receiving area including CIP (Clean in Place), COP (Clean out of Place), and manual cleaning of all equipment associated with receiving.
      -Prepare food-grade waste and load-outs for shipment.
